Lousy weeks = Angel Food Cake (Science. Obviously)

Sooo…. Hi! It’s been awhile.

You can thank grad school for that (and for being a royal pain in my butt). My stomach was being a real winner today too, rude. On the bright side, one of the things it seems to tolerate with a minimum of fuss is this cake! Probably because angel food is basically egg whites and air and fluff, in the best possible combination. I’ve always loved angel food — I asked for it for a birthday cake at some point when I was a kid, and I’ve always thought it was delicious.

It’s fun to make, too! Egg whites are my favorite piece of kitchen chemistry. I love watching them go from foamy… to glossy… to peaks! I never get tired of it. And besides, even though I am the one who hardly ever uses a mixer unless I really have to, angel food gives me the chance to get out my beautiful red kitchenaide stand mixer! Wheeeeee! It looked so happy to see me. And don’t tell me inanimate objects don’t have feelings… KITCHEN APPLIANCES totally do. They feel neglected and sad when you just leave them to languish in the pantry… which is also why I love my pegboard so much. It means that my pots and pans and whatnot can hang out and watch the action from their corner (and egg me on. It’s like “use me!!! I am so great for making eggs!!! … constant ruckus from the peanut gallery).

I will stop anthropomorphizing my appliances for the time being in order to get back to the cake. But admit it… if you love to cook and bake, your favorite pans and appliances become your friends. Don’t try to deny it, I know you. You know where they stick, how they heat, if they affect the consistency of whatever you’re baking… they’re like friends!

And is gluten free, refined sugar free, and beyond delicious. When I made this, I actually ended up with a much denser consistency than angel food usually has (I have reason to suspect my oven; firstly, it is wee. It’s like half the size of a normal oven, so consequently all of my sheet pans are quarter sized. I feel like a Barbie. But also I do believe it runs hot and heats unevenly. Further research is required; until then it’s an interesting challenge) — but I don’t care, because it is AMAZING! It’s almost… custardy. But also kind of fluffy?! If you can possibly have custard and fluff at the same time, this is it. Mine got a tad overdone on the top half, and I actually pulled it out far sooner than it was supposed to go (hence the suspicion  that my oven runs hot), since it was done and browning quickly. It didn’t rise as much as they normally do, but it has that custardy wonderfulness so E and I definitely don’t care. Add to that, it’s tummy friendly and lower in sugar than most angel food cakes, so it just wins all around.

That all being said, I highly recommend making it on a Friday afternoon when your week has been rather wretched and you just need some cake. Not that I speak from experience or anything. Nope. Not me..

Grain Free Maple Angel Food Cake

Made of arrowroot starch, this cake is tummy friendly for IBS, gluten-free, grain free, and paleo. It’s also refined sugar free and lower in sugar than most angel food cakes, which is a bonus in my book for sure. Recipe from Deliciously Organic, here! I didn’t change a thing, as it was perfect as is. Yield: 1 cake (standard angel food pan).

  • 12 egg whites (I used 1 carton = to 10 whites + 2 whites from whole eggs for convenience)
  • 1 tsp fresh lemon juice
  • 1/4 tsp fine sea salt
  • 1.25 tsp cream of tartar
  • 1 tbsp pure vanilla extract
  • 3/4 c maple sugar, divided
  • 1 c arrowroot starch
  • whatever toppings float your boat for serving — I made a simple raspberry compote and topped it with a little shredded coconut

Preheat the oven to 350, and get out your *un-greased* angel food tube pan. You might want to put a cookie sheet down below the cake pan in the oven to account for any leakage — my tube pan tends to leak just a bit out of the bottom. Adjust the rack for the cake to be in the middle of the oven.

In the bowl of a stand mixer, beat the egg whites with the lemon juice on medium high until foamy. Add salt, cream of tartar, and vanilla, and continue beating on medium high until soft peaks form, about 1 to 2 minutes.

With the mixer running on medium, slowly add 1/2 c of the maple sugar, a spoonful at a time. Sift the remaining maple sugar and arrowroot starch into a small bowl, and, with the mixer still running, slowly add this to the mixer bowl. Once it’s all added, whip on medium high until completely incorporated (you may need to scrape the sides of the mixer bowl, I did). Pour the batter into your tube pan, and bake for 35-45 minutes*, until the top is golden brown and the cake is puffed.

*Normal ovens are probably done at a minimum of 40 minutes. Mine was excessively brown at 35, and done, though not as puffy as it could be.

Remove the cake from the oven, and immediately invert over the neck of a wine bottle to cool completely — about 1 to 1.5 hours. Cooling it upside-down helps maximize loft! Once the cake is completely cooled, run a knife around the inside of the pans to loosen the sides, and pull the cake + the removable bottom out of the pan. Run a knife along the bottom between the pan and the cake to loosen it fully, then lift off to the serving plate. Decorate at will!

Angel food cake keeps well at room temp for a day or two if it’s not too hot or humid where you are. I’m keeping mine in the fridge and it’s totally fine — cover it with an inverted bowl and it will stay good for several days in the fridge.

So! Fourth of July! Always fun in the dessert department, because who doesn’t love an excuse for a celebration-type of dessert. And hold the phone, is it possible that I put something up here that isn’t a bar?! …. *pin drops* No. can’t be.

And despite it giving me much grief in the assembly (hot weather and butter-based icing are not really the best of friends), it did turn out rather pretty— Props to E’s mom Jana for the cute little flags! This is a pretty simple cake to put together as well, as the lemon curd can be made ahead of time, and the buttercream comes together in about five seconds.

This is the first time I’ve made a fun dessert in quite a while… as I mentioned before a few posts back, I’ve been having quite the run of stomach issues lately, and have been attempting to figure out why my digestive system seems to hate me so much of late. Rude. Still no concrete answers, sigh… but one day at a time. I’ve been experimenting with reduced / no gluten,  though the jury is still out on that one. Well actually, jury is still out, period. So, cake. Because I don’t seem to feel much worse when I do eat it, and it was the Fourth! Celebrations should ensue.

Apologies for the huge gaps between my posts these days… life has been crazy the last few months and isn’t really getting much calmer (in fact, I start grad school in less than a month, so I don’t expect to be able to keep regular posts coming. We’ll see how things shake out!) E and I move in to our apartment the first week of September, so maybe after that things will get a little more normal. We’ll see, nothing is ever normal around here (because normal = boring. ha)

Whole Wheat Lemon Cake with Lemon Curd and Vanilla Buttercream

Whole grains, healthy fats, and CAKE. Winner, winner. A lightly sweet, lightly lemony cake is complemented by a rich but not too decadent vanilla buttercream, and tart homemade lemon curd. The cake itself is refined sugar free, but there is powdered sugar in the frosting. If you have the time, definitely make homemade lemon curd. It is eons better than the stuff you can buy in the store, and about ten zillion times cheaper. Yield: a 2 layer, 9″ cake + enough buttercream for the filling and the top. I preferred a naked cake look for this one, as it was hot and nobody really wants a mega glut of frosting when it’s over 90 outside… the cake is light but very satisfying, and doesn’t make you feel like you need a nap afterwards! For the cake:

  • 2.5 c + 4 tbsp whole wheat pastry flour
  • 1/2 tsp baking soda
  • 1.5 tsp baking powder
  • scant 1 tsp fine sea salt
  • 1 c coconut sugar, divided
  • 1 c avocado oil
  • 2 tsp vanilla extract
  • 2 eggs
  • 1.5 c buttermilk
  • 4 tbsp fresh lemon juice
  • zest of two medium/good-sized lemons

For the frosting:

  • 1 stick of salted butter
  • 2 c powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp lemon curd

Lemon curd is the same recipe I used about three years ago (but with regular lemons instead of meyer this time); my recipe is here. Yield is about 1-1.5 c. You won’t use it all for the cake, unless you use the extra to top the individual slices. I used some in the buttercream, and some on the top. I suggest making it the day before, and just letting it hang out in a jar in the fridge overnight.

Raspberries, for garnish.

For the cake: preheat the oven to 325, and lightly grease+flour two 9″ cake pans.

In a medium bowl, whisk together whole wheat flour, baking soda, and sea salt. Set aside.

In a smaller bowl, mash together the lemon zest and 2 tbsp coconut sugar, until fragrant. Set aside. In a large bowl, use an electric mixer to combine remaining sugar, avocado oil, and eggs. Beat until lighter (though because of the coconut sugar, it won’t significantly lighten) and fluffy, about 4-5 minutes. Add in lemon zest + sugar mixture. Combine buttermilk, vanilla, and lemon juice (I like using a liquid measure for easy pouring). Alternating dry ingredients and wet, add them to the larger bowl with the sugar/oil/eggs, starting and ending with flour. Do not overmix. Pour the batter into the prepared pans, and bake for 30-35 minutes—the tops should spring back when touched lightly, and a tester should come out clean.

Let cool in the pans for 10 minutes before turning out onto a cooling rack to cool completely.

For the buttercream:

In a large bowl, use an electric mixer to beat softened butter, powdered sugar, and vanilla until smooth. Add in 2 tbsp of lemon curd, and beat briefly to combine.

Frost the cooled cake as desired — I did a layer of buttercream/curd in the center, and topped the cake with the majority of the buttercream + another layer of lemon curd. Be careful of the cake sliding — my kitchen was hot so I ended up skewering the cake for transport, and letting it set up in the fridge for several hours prior to serving. Garnish with raspberries or another berry of your choice! Serve with extra lemon curd, because it’s basically the food of the gods..

Store covered cake in the fridge, assuming you have any leftovers!

Here we go again with one of those hopefully-not-too-often posts of, “hello, I’ve been super stressed and super busy and have therefore not cooked often enough for my liking but I love my bloglet and invisible internet friends and I can’t abandon them sooooo… here is a post of ‘this that and the other thing’ I’ve eaten recently…”

Just bear with me. I’m still recovering from taking the GRE, which was the test equivalent of something sucking out your soul and dancing on it. Four hours staring at a computer screen, testing. And testing. And testing. Ewww. Good thing I face planted into THIS afterwards.

There is now a hole in this cake and alcohol as well. Because… why not?? Also because… Happy Belated, Vacuum Vati! He has this penchant for drinking scotch out of these special glasses (and I can tell what he’s had because it’s either scotch or graham crackers with milk. That’s random, you say…. but actually there is a method to his madness. The wide mouthed glasses let the scotch breathe properly and also are the appropriate width for graham cracker dippage). Actually it’s really fun to just tell him I know exactly what he’s been drinking and have him be slightly baffled as to how I know. Muahhaha. Exemplary powers of observation, that’s what that is. And mildly hilarious to watch him drink scotch and carefully put a coaster over the top of the aforementioned wide mouth glass to discourage escaping peat-boggishness. Because my mom rightfully dislikes the peat bog smell that emanates from certain bottles of superior scotch. He has a special peat-bog-discouraging coaster. It’s hilarious and I love it.

And actually I essayed a teeny sip of scotch today and it was DISGUSTING. I coughed for days. It burns all the way down. BUT. Then you put it in chocolate cake. With coconut sugar. And chocolate. And five spice. And CARAMEL and ohmygod is it actually delicious. I mean really, how is cake NOT delicious. But this one is especially good.

Chocolate Scotch Cake with Whiskey Caramel Glaze

Recipe adapted from Love and Olive Oil, here! Recipe yields a normal sized bundt cake. Refined sugar free (though it IS sweet, as per VV’s request), whole wheat, and healthy fats from the avocado oil. So it’s good for you! Uh. No. But indulge accordingly, because that’s what birthdays are for! Don’t worry–it’s not overly scotch-y, either. I like it quite a bit and I don’t even like scotch. It’s like chocolate cake that is deeper and richer than your average fair.

Let’s get our cake on:

  • 1.5 c coconut sugar
  • 2 c whole wheat pastry flour
  • 3/4 c unsweetened cocoa powder, sifted
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1/2 tsp five spice
  • 1 c lowfat buttermilk
  • 2 eggs
  • 1/2 c avocado oil
  • 2 tsp vanilla extract
  • 3/4 c warm water
  • 1/4 (or closer to 1/3… I went heavy handed) c good quality Scotch whiskey [preferably one that smells less like a peat bog]
  • 1/2 c extra dark chocolate chips

For the caramel:

  • 1 c coconut sugar
  • pinch of cream of tartar
  • 1/4 c water
  • 2/3 c heavy cream
  • 1 tbsp salted butter
  • 2 tbsp Scotch whiskey

Get yo’ cake on:

Preheat the oven to 350, and grease the living daylights out of a bundt pan. Standard bundt size is fine {I use coconut oil for greasing}. Combine 1 tbsp flour+1 tbsp cocoa powder, and flour the inside of the pan, tapping out all the excess.

In a large bowl, whisk together sugar, flour, sifted cocoa, baking powder+soda, salt, and five spice until combined. In a separate bowl, whisk together buttermilk, eggs, avocado oil, and vanilla. Pour wet into dry, and use an electric mixer to beat until just combined. Add water and scotch, and continue mixing until just barely incorporated (don’t over mix, puhhleeez). Stir in the chocolate chips, and pour into the prepared pan. Bake for 50-55 minutes, until a tester inserted into the fat part of the cake comes out clean. Let cool on a rack in the pan until cool enough to handle, then flip out and cool completely (the cake, not you. I know the cake is fabby but don’t flip out. You can eat it… soon!!).

While the cake is baking, make the caramel! In a high-sided sauce pan over medium-high heat, add sugar and cream of tartar. Pour water around the edges and bring to a boil, then cover and let sit for 2 minutes (the steam melts the sugar evenly). Uncover, and boil for a few minutes more, until frothy. It should NOT smell burnt, just delicious. Remove from heat, whisk in cream and butter until the lumps are gone (carefully, it can splatter). Return to heat and whisk a few minutes more until smooth. Remove from heat again, and cool in a heat proof container until ready to use, preferably an hour or two to let it thicken.

Pour about half the glaze over the cooled cake once you’re ready to serve! Then slice away and drizzle mooooore caramel over the individual slices because why not?? Because caramel, that’s why. Eat immediately. Store in an airtight container in the fridge for longer cake preservation… if you’re crazy enough to have leftovers.

I ALWAYS bake before I leave for camp. I’m not sure when this started but… it did (shocking, I know… me? Baking?! Weird) and I have no reason to be breaking this delicious trend.

And I leave tomorrow! This totally snuck up on me but I am so ready for ten days of mountain fun with my camp fambam. Dirt. Hair that could scrub out a pot (yes, I was told I should do that last summer and immediately decided I would shower; as much as I love having steel wool for hair) (my hair does really interesting things when it isn’t washed for a zillion days) (yes I’m too lazy to shower because I just get dusty again and I’m camping and I’m in the lake soooo who cares?!). Enough with the parenthetical rambles. Moving on.

Campfires where I go to bed smelling like woodsmoke… brownies to die for even though they’re made with a mix, I’m obsessed… eating outdoors, every meal… stars so bright you think your eyes are malfunctioning… singing the most ridiculous songs because you can… yoga on the dock… a complete technology detox… beautiful scenery…friends. My indescribable camp family. So much Two Sentinels love!

But anyway, haven’t left yet, and in between last minute packing, I made these!

Whole wheat buttermilk biscuit peach shortcakes with vegan caramel sauce and ice cream.

Peeeeeaaacheeesssss. My favorite part of summer. Actually that would be a tough call since I love berries equally as much… all the fruit. I want ALL of it!! But besides that, we happened to have an excess of peaches this week so instead of eating them all leaning over the sink with juice going everywhere, I made dessert. Of course.

Whole Wheat Peach Shortcakes with Vegan Caramel (And ice cream. Obvs)

I like barely sweet shortcakes, since they highlight the super-sweetness of perfectly in-season summer fruit. Mmmm. These are whole wheat, made with buttermilk for a bit of a tang. Perfectly balanced against the sweet peaches and maple caramel.. and ice cream. Because summer dessert = ice cream. Or whipped cream, also fine, I just went with what I had. Shortcake recipe lightly adapted from Food52, here, and caramel borrowed from Blissful Basil, here! Yield: 6 shortcake/biscuits; I made a half batch of caramel for 4 peeps, so those measurements are listed below. Makes about a cup.

For the shortcakes (whole wheat is good for youuuu! So is a little butter now and then):

  • 1.75 c whole wheat pastry flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp fine sea salt
  • 1 tbsp coconut sugar
  • 4 tbsp chilled unsalted butter, cut into smallish pieces
  • 3/4 c buttermilk (mine was low fat)

For the filling:

  • An excessive amount of peaches, diced (I leave the skin on mine), tossed in a bit of coconut sugar if yours are less than perfectly ripe
  • ridiculously delicious ice cream of choice

For the caramel (full of healthy fats and good nutrients!! Winning):

  • 1/6 c coconut oil
  • 1/4 c unsalted, creamy almond butter
  • 1/4 c pure maple syrup
  • 1/4 tsp sea salt
  • 1 runneth-over tsp vanilla extract

Preheat the oven to 450, and line a baking sheet with parchment paper.

In a largeish bowl, whisk together flour, baking powder and soda, salt, and sugar. Cut in the butter using your fingertips (my preferred method) or a pastry cutter, until things start looking like coarse cornmeal and the butter is distributed evenlyish. Make a well in the center (look! You get to play with your food!), pour in the buttermilk, then use a spoon or spatula to stir it all together, until just combined (do try not to over mix). Divide the dough into six cute little balls, then flatten slightly and place on the baking sheet. Bake for just about 15 minutes, until the tops are firm and lightly browned. Let cool slightly on a rack before serving.

While the shortcakes are baking, make caramel!

In a small saucepan over medium, heat coconut oil, almond butter, maple, and sea salt over medium until all are melted and incorporated. This shouldn’t take more than a minute or two, which is excellent for instant gratification. Turn off the heat and stir in vanilla. Serve warm or cold, and store leftovers in the fridge!

I could tell you how to assemble your shortcakes but that might insult your intelligence… but I would suggest cutting them in half to get maximum cake square footage to soak up excessive amounts of ice cream and caramel and peach juice…

For when there’s a dinner party with besties+boys and you’re bringing dessert (because um obviously, why would I bring anything else?!) and really… dinner party desserts = epic. Because on a random week day cookies or a simple sheet cake are all well and good, but a layer cake? I wish. I mean, I could but a) unfortunately don’t have time for that and b) I would be a zillion pounds if I baked like this all the time.

BUT. For a dinner party? Absolutely. Keep that in mind, all y’all who want my desserts… invite me to your next din din shenanigans! Ha. I totally break the silly rule allllll the time that says you’re not supposed to try out new recipes on guests (or I suppose hosts) but HELLO if I did that I would never make anything new, so too bad. Luckily enough not only was this not an unmitigated disaster, but it was freaking fantastic. Like maybe the best cake I’ve made and eaten in…. months. At least.

Mutti said it was the best cake I’d ever made… and I went home with one slice out of an entire two layer, 9″ cake. Hmm… I think I’m picking up on something here… this cake was DAMN good. I know I know, you’re not supposed to say your own food is good but I can’t help it because I want this all over again and it’s gone and what whyyyy?!

Don’t wait till your next dinner party to make this. Do yourself a favor, and then have cake for breakfast. Because we all know that’s what you get to do when you’re an adult.

Banana Caramel Cake with Salted Coconut Caramel and Caramel Buttercream

Besides that this is utterly DELICIOUS, it also happens to be refined sugar free! The caramel is paleo (though the cake isn’t), and the cake is made with whole wheat flour so you get a bit of good fiber and whole grains with your decadence. Cake and buttercream recipes are slightly adapted from the Kitchn, here, and the caramel comes from An Edible Mosaic, here! Makes one two layer, 9″ cake, enough buttercream to fill and top cake, and a generous amount of caramel because OF COURSE you want some left over for drizzle purposes later. I recommend making the caramel a day early, so you can just do cake+buttercream the day you’re eating all the goodness.

Salted Coconut Caramel

Makes more than enough to drizzle over cake while frosting, plus more for drizzle purposes just prior to eating. AND has enough for leftovers later. Win win win. The yield is somewhere around 2.5 cups of caramel. You’ll use at least 1.5 generous cups for the cake+buttercream, and then at least another 1/2 cup for drizzle.

  • 2 cans full-fat coconut milk
  • 1/2 c pure maple syrup
  • 1/2 c coconut sugar
  • 2 tsp vanilla extract
  • 2 tbsp unsalted butter
  • scant 1 tsp fine sea salt

In a saucepan over medium high heat, combine coconut milk, maple, and coconut sugar. Let it boil, then turn it down so it’s just barely boiling, with the bubbles just breaking the surface. Whisking continuously, cook for 15-20 minutes, until the caramel has thickened slightly (though it will still be a runnier caramel, that’s fine), the liquid has reduced, and the color is darker. I cooked mine for a bit over 20 minutes. Remove from heat and stir in vanilla, butter, and sea salt, and whisk until smooth. Let cool completely in the pan, then store in a sealed jar in the fridge [because we know I store everything in jars anyway].

Banana Caramel Cake

  • 3/4 c grass-fed, unsalted butter, softened to room temp for an hour
  • 3/4 c coconut sugar
  • 3 eggs
  • 3 c whole wheat pastry flour
  • 1.5 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1.5 c unsweetened almond milk
  • 2 tsp vanilla
  • 1.5 c mashed, ripe bananas (about 4-5 bananas)
  • heaping 1 c of coconut caramel (recipe above)

Preheat the oven to 325, and grease two 9″ baking pans with coconut oil/butter.

in a large bowl, cream together the softened butter and coconut sugar (I used a hand mixer), until fluffy. Add in the eggs, one at a time, beating after each addition until the batter becomes silky looking and slightly lighter in color.

In a smaller bowl, whisk together flour, baking soda, and sea salt. Thoroughly mash bananas in a small bowl, then whisk them together with the almond milk and vanilla. Begin adding flour mixture and banana mix into the butter+eggs bowl, beating after each addition and alternating dry-wet-dry-wet-dry until incorporated. Pour batter into prepared pans. Pour a heaping 1/2 cup of caramel over each pan, and use a knife to swirl the liquid into the cake batter (it’s best if it isn’t completely incorporated, leave some caramelly pockets).

Bake for 45-50 minutes, when a tester should come out clean. Let cool in the pans for a few minutes, then run a knife around the edges and turn them out onto cooling racks. Let cool completely before frosting.

Caramel Buttercream

  • 1/2 c grass fed, unsalted butter
  • 1/2 c caramel sauce (recipe above)
  • 1 tsp vanilla
  • 1/4 tsp fine sea salt
  • 1.5 c powdered sugar

In a largeish bowl, use a hand mixer to beat together butter, caramel sauce, vanilla, and sea salt until mostly incorporated and smooth(don’t worry if at first it looks a little grainy, mine smoothed right out after I beat in the sugar). Pour in powdered sugar, and beat until a silky frosting forms.

Once cake is completely cool, flip the bottom layer carefully onto your cake plate of choice, frost the middle, then flip the other layer on top. Frost that, using as much buttercream as humanly possible. Be a little careful, as this frosting tends to slip a little bit (don’t make any radical maneuvers with your cake whilst transporting or anything). Top with more drizzled caramel (obvi), and some unsweetened shredded coconut+chopped pecans if that floats your boat (it very much floated mine and my dinner companions). It’s also especially awesome with good vanilla ice cream…

Store the cake in the fridge prior to serving, as well as any leftovers (ha, I dare you).

My dad and his brother started the day off by sending each other peep-eating photos. I guess that would make it Happy Peep-Eating-Day?! Or maybe it was a Peep-Off. Apparently my cousin was also photographed eating them, perhaps it’s a family affair? Whatever. The peep-eating trend obviously stops with me…sorry about that. Given that I absolutely abhor those nasty little piles of sugar-coated marshmallowy goop (nothing personal to the peep eaters out there, vacuum vati notwithstanding), I made this instead! Happy cake eating day to me! Because Easter=chocolate. Because…chocolate. Why do you even need a reason??

AND you omit the refined sugar and all that gunk. So really, I’m doing vacuum vati a favor by providing some balance to offset his peep-eating ways. Not that a peep (or ten) once a year is a bad thing…. just don’t blame me when you discover your insides are technicolor. Just sayin’.

And really. It’s Eater (I mean Easter, whoops. See??) so that means brunch and eggs benedict and cake and chocolate. Preferably chocolate before breakfast or chocolate ganache eaten with a finger spatula (don’t look at me like that. I know you’ve done it). Fortunately, or unfortunately, depending on how you look at it, my Easter has included none of these things except a finger spatula (I did make cake, after all).

MY Easter started off at 5 am with toast… and then a sunrise service…and then shadow yoga studies at nine… and then a ravenous stuffing of basil-y and mushroom-y eggs into my face at 11:30 because I was ravenous after yoga and breakfast at 5; before which I had thrown a two layer cake together in twenty minutes. That is winning, that is. Oh. And I recently ate a truffle (salted caramel dark chocolate), courtesy of my mom who knows me SO well and put only intensely dark chocolate things and raw cocoa nibs in my Easter basket. Thanks mom!

Banana Date Layer Cake

This cake is not for the sweet-loving at heart, given that it is naturally sweetened and naturally not very sweet! But it IS good, so I would recommend it for those of you who either can’t or don’t eat refined sugar. It makes a dense, lightly sweet cake with a rich chocolate ganache. Despite being lightly sweet, it went over quite well for a mixed audience. I think it would be FAB with ice cream…It can be gluten free, if you choose, and it’s refined sugar free. Sub in maple for the honey in the ganache, and it becomes vegan. It’s also fairly easy to whip together, which is always nice. Recipe lightly adapted from Green Spirit Adventures, here! Serves… a lot. I fed this to a big family Easter dinner and we still have a few slices left over for Vacuum Vati’s breakfast.

Banana Layer

  • 3 super-ripe bananas (the nastier looking, the better)
  • 3 dates (soaked if needed)
  • 6 tbsp unrefined coconut oil, melted
  • 1/4 c unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 c whole wheat pastry flour
  • 1.5 tsp baking powder
  • 1/2 tsp fine sea salt

Cocoa-Date Layer

  • 1.5 c unsweetened almond milk
  • 8 dates (Soaked if needed)
  • 6 tbsp unrefined coconut oil, melted
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 2 c whole wheat pastry flour
  • 1/3 c unsweetened cocoa powder
  • 1/4 c coconut sugar
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Ganache

  • 200 g dark chocolate (I used two 100 g bars of 73%), broken into smallish pieces
  • 1 c unsweetened almond milk
  • 1/2 tsp almond extract
  • 1 tsp vanilla extract
  • 3.5 tbsp tahini
  • 2 tsp raw honey
  • a hefty pinch of sea salt

Garnish

  • unsweetened coconut
  • roughly chopped walnuts and pistachios
  • extra dark chocolate chips

Preheat the oven to 350 and lightly grease two round 9″ cake pans. Bake the cakes at the same time for ease of everything…

For the banana layer. Whisk together flour, baking powder, and salt in a large bowl and set aside. Whiz everything else (bananas, dates, coconut oil, almond milk, vanilla extract) together in a food processor until mostly smooth. Toss wet into dry, and stir until just combined. The batter should be really thick—spread it evenly into the prepared pan rather than pouring it (good luck, it won’t pour..). Smooth the top and set aside until you finish the other layer.

For the cocoa date layer: Whisk together flour, cocoa powder, coconut sugar, cinnamon, baking soda and powder, and salt. Wash out your food processor, and whiz everything else together again (told you this was easy): almond milk, dates, coconut oil, almond and vanilla extracts. Wet into dry again, stir to combine again—this will also be a really thick batter, so spread it in evenly.

Bake both cakes at the same time for about 30 minutes (until a tester comes out clean)—my banana layer went for 30 and my cocoa layer for 35. Let cool until you can handle the cake pans, then turn them out to cool completely on a rack.

For frosting purposes, combine almond milk, almond extract, vanilla extract and tahini in a small saucepan over low heat. Once it’s warmed through, add the chocolate pieces and stir until completely melted (I turned off the heat after a few minutes but kept stirring). Stir in honey and salt.

Once all is said and done, find a cake plate… pick your bottom layer, then slap on a good layer of ganache on top of it. Pour a boatload of shredded coconut and chocolate chips into the middle, then slap on the second layer. Drizzle/pour/gratuitously indulge in being messy the rest of the ganache over the top and sides. The goal here is RUSTICATED! Top with chopped nuts, more chippies and coconut.

Glory in its beauty… then slice and eat. Happy Eater!!

Hello!

This is what I did with my weekend.

A nearest and dearest has a birthday today!! So of course I baked, decorated, surprised, and delighted. It’s what I do. My way to express love and gratitude, the feelings that bubble up inside when I know I’ve surprised someone… and the joy of sharing something delicious. That’s me. That’s who I am.

Even though I tend towards “healthier” baking, I still love the simplicity of a more traditional approach. This cake is that. Simple. Flavorful. Soul-satisfying. Nothing soothes me more than this cake. And the aroma of it is heavenly—I dare you to find something that smells as good.

That being said, of course I put my own spin on it anyway. Whole wheat pastry flour instead of white, coconut sugar instead of refined cane sugar, and dark chocolate ganache. And an om, obviously. Symbolic both for the birthday recipient, and for me.

Yes, I do (copious amounts of daily) yoga, meditate, study yogic philosophy. That is my om.

But my om is also baking, decorating, and the giddy feeling that arises from a successful surprise of a gastronomical treat. No matter how simple, this will always be my favorite gesture.

But. If I didn’t tell you… could you guess what this decadent wedge holds? Well… if you know me, I’m sure you have a decent idea… just take  a minute to think it over and then get back to me.

Because if you did… you’re right! And maybe the green peeking out of that first picture was kind of a giveaway… whatever. Get a little more specific: perhaps two servings of vegetables, and about two servings of fruit?! And it’s dessert. Cholesterol free, vegan, and delicious dessert. Make this for your friends when they’re skeptical that vegan = delicious.

See? Life is all about balance (and trx handstands, natch). As Oscar Wilde so wisely said: “everything in moderation, including moderation!”. I do have to say though, this torte requires less moderation than usual since it’s so freaking good for you. Chocolate= antioxidants. Zucchini= veggie (veggie = by definition, healthy, obvs). Banana= potassium. Whole wheat flour = whole grain fiber. Almonds = healthy fats! Wheeeee!

Chocolate Zucchini Torte

Recipe gratefully adapted slightly from Kohler Created, here! Next time I would perhaps leave out or reduce the oil, as the cake is definitely hydrated (you see I avoid that ‘oist’ word) enough with all the produce crammed inside.

  • 2 c whole wheat pastry flour
  • 1/2 c unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/8 c canola oil
  • 1/4 c unsweetened applesauce
  • 1/3 c granulated sugar
  • 1/2 c brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground coffee
  • 1.5 ripe bananas, mashed
  • 4 tbsp water
  • 1/4 c unsweetened almond milk
  • 2 c zucchini, finely grated
  • 1/2 c dark chocolate chips

For topping: 3 tbsp brown sugar + 1/2 c chopped almonds

Preheat the oven to 360. Grease and flour a 9″ cake pan.

In a largeish bowl, sift flour, cocoa powder, baking soda and powder, and salt. In another bowl, combine oil, applesauce, sugars, vanilla, and coffee. Beat vigorously (use those biceps!) for a few minutes… or use a mixer. In a smallish bowl, mash bananas, then add water. Add bananas, beat to combine, then add milk.

Combine 1/2 c of the flour mix to the grated zucchini and chocolate chips. Slowly beat in the remaining flour into the banana bowl, until incorporated. Stir in zucchini and mix thoroughly. The batter should be thick (and delicious). Pour into the prepared pan, top with brown sugar+almonds, and bake for about 45 minutes, until a tester comes out clean. Cool in the pan before attempting to slice! This cake is even better the next day (promise!), if you can make it last that long…

Pumpkin Sweet Roulade with Hazelnut Filling and Hazelnut Caramel Drizzle

This cake is freaking fantastic. Pumpkin cake rolled around a hazelnut licqueur-spiked whipped cream filling with shaved dark chocolate chunks, topped with a hazelnut spiked caramel. Um, hello, what isn’t there to love?! Pumpkin, cream, hazelnut, and chocolate: go celebrate Christmas and eat this with your loved ones!

The cake is gratefully borrowed from (and caramel inspired by!) Cate’s World Kitchen, here, but the rest is my brainchild! Serves… enough. Probably seven 1″ slices? Ish? Depending on how large of a dessert coma you’d like to go into.

For the cake:

  • 4 eggs, separated
  • scant 1/4 c brown sugar, loose (not packed)
  • 1/2 c whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • scant 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp allspice
  • 1/2 c pumpkin puree
  • 1/4 c granulated sugar

For the filling:

  • 1 c (ish) heavy cream
  • 1 tsp of powdered sugar
  • good glug of vanilla
  • a healthy glug of hazelnut liqueur (I used Fra Angelico)
  • several squares of dark chocolate, finely chopped (I used 72% Belgian dark)

*I never measure for the filling, so just taste as you go until you have the right balance of flavors for you and your audience. My particular audience loves hazelnut, so I was veryyyy generous, hehe.

For the caramel:

  • 1/2 c granulated sugar
  • 1/4 + 1/8 c heavy cream
  • 2 tbsp butter
  • another healthy glug of hazelnut liqueur (I used Fra Angelico)

For the cake:

Preheat the oven to 350, and line a jelly roll pan with parchment paper. Lightly grease the pan to stick the paper down, then lightly grease the paper as well. I always use unrefined coconut oil for this.

In a medium-sized bowl, whip egg yolks until they’re light and frothy, a few minutes. Add in brown sugar, and beat another minute more. Into a small bowl, sift flour, baking powder, baking soda, salt, cinnamon, and allspice. Beat into the egg/sugar mix in three additions, until incorporated. Beat in pumpkin puree on low. In a separate, non reactive bowl, beat egg whites until soft peaks form (I like to use the bowl of my kitchenaide with my handheld mixer). Slowly drizzle in sugar, and beat until the eggs hold stiff peaks. Fold the egg whites into the pumpkin mix, until just combined. Pour the batter into the prepared jelly roll pan, and smooth it out so that it looks nice… Pop into the oven for 15ish minutes, until the cake springs back when poked.

Let cool on a wire rack in the pan for a few minutes, then remove from pan (by lifting up the parchment) and set back on the wire rack temporarily.

Whip the cream in yet another bowl, until it just barely starts to hold shape. Pour in your several glugs of hazelnut goodness, as well as vanilla and powdered sugar. Beat until the cream holds it’s shape (but isn’t butter… believe me, I’ve gone too far a few times). Fold in chopped dark chocolate.

Spread the filling on the top of the pumpkin roll, reserving a bit of cream for topping dollops. Start rolling (carefully!!) from the short end, removing the parchment as you go, until the roll is complete. Carefully transfer it to a plate. Cover and store in the fridge until served.

For the caramel, melt sugar over medium heat in a heavy bottomed saucepan until just barely melted (don’t stir it, just swirl the pan around frequently). Stir in butter until combined. Turn heat to low, and add cream a spoonful at a time until the caramel is the desired consistency. Remove from heat and add Fra Angelico. Pour (drizzling is for sissies) generously over cake slices, and garnish with extra whipped cream (it’s Christmas, after all). Eat the leftover caramel with spoon, obviously… I mean, why WOULDN’T you do that?!
